As for the audiobook "said" problem, it points to the age old question of "who's doing the talking here?"
I don't think I've ever listened to an audiobook novel, but I'm sure you are correct. Given the choice between "said" and "he admonished gravely," I'll choose said. But if listening to "said" repeatedly became too annoying, I'd probably throw the book, in this case device, against the wall.
